Flavors of the world

Zeru was born from the shared dream of a food lover and an experienced chef.

Its name means “sky” in Basque, and its warm, traditional atmosphere, with brick walls, makes it a welcoming space.

Zeru's concept is “flavors of the world,” so its menu features dishes from various countries, including Peru, where executive chef Juan Carlos Cartagena was born. The Ecuadorian touch is present in some recipes, such as the “shrimp ceviche” and the “mixed ceviche” which, although Peruvian in style, contains peanuts and avocado, ingredients that are perfectly combined with leche de tigre and served with glazed sweet potato and corn.

Juan Carlos Cartagena Gonzales

A 39-year-old Peruvian chef, he graduated from the D'Gallia Gastronomic Institute (Lima, Peru). He started his career at Restaurante Rodrigo in Lima, then moved on to Restaurante Rafael, also in Lima. In 2008, he arrived in Guayaquil for the opening of Restaurante Sucre. In 2011, he traveled to San Sebastián, Spain, to do an internship at the Arzak Restaurant. He then worked for six months at the El Empalme restaurant in Río Negro del Puente, Zamora, Spain. In 2013, he returned to Guayaquil to work at the Blu Restaurant. He was later hired in Quito as chef at the Barranco Restaurant. Since August 2015, he has been working as chef at Zeru Restaurant.

The ripe plantain croquettes stuffed with fresh cheese with a touch of pepper, cayenne, pork ribs, and mote purée are a much more gourmet version of the traditional fritada con maduro y mote. Another delicious starter option is the scallop tiraditos with avocado aioli.
